This bar is a perfect afternoon pick-me-up. Full of nuts and seeds and drizzled with dark chocolate - natural sources of magnesium, zinc and pantothenic acid which support normal mental performance and normal cognitive function.
Recipe: Makes 10 bars

Ingredients:
130g rolled oats
100g pumpkin seeds
80g almonds
60g sunflower seeds
20g chia seeds
150g smooth peanut butter
60ml maple syrup or honey
1 tsp vanilla extract
Pinch of salt
100g dark chocolate
Method:
1. Line a 20x20cm tray with baking paper
2. Add most of the nuts and seeds to a food processor a blitz roughly (make sure to leave some texture)
3. Add the blitzed nut mixture to a bowl with the remaining nuts and seeds, oats and salt
4. Warm the peanut butter and maple syrup over a medium heat until softened
5. Add the warmed peanut butter and maple syrup along with the vanilla extract to the bowl with the oats, nuts and seeds, and mix until everything is coated and sticky
6. Press the mixture into the lined tray
7. Melt the chocolate over a bain-marie: fill a saucepan with a few centimetres of water and bring to a simmer. Break the chocolate into a heat-proof bowl and place the bowl over the simmering water. Stir occasionally until melted and glossy
8. Spread the melted chocolate over the top of the bars
9. Chill for one-to-two hours or overnight, then cut into ten bars
10. Store in an airtight container for up to one week (or freeze for three months)
